A Thanksgiving Day Treat

Recently a co-worker of mine shared a delicious recipe for Passion Cake.  We decided to put our own spin on it and add Solerno Blood Orange Liquor to the icing for a boozy treat, a perfect Thanksgiving desert! 

Passion Cake (compliments of Natalie Zalka)

Cake Mix:

1/4 cup chopped walnuts

2 mashed bananas

3/4 cup sugar

3 large eggs

1 1/4 cup flour

1 teaspoon salt

1 teaspoon baking soda

2 teaspoons baking powder

3/4 cup grated carrots (2 to 3)

3/4 cups corn oil

Topping:

1/4 cup full fat cream cheese

1/4 cup full fat butter

1/2 cup powdered sugar

Solerno Blood Orange Liquor to taste

Assembly:

1. Pre-heat the oven to 350F

2. Grease two 8″ round cake tins

3. Mix the oil, sugar, and eggs.  Beat well.

4. Chop the walnuts

5. Wash and peel the carrots, then coarsely grate

6. Add the bananas, carrots and walnuts to the mixture with the flour, baking powder, baking soda and salt

7. Mix well then pour equally into tins

8. Bake for 30-35 minutes, until the cakes spring back when pressed and a skewer comes out clean

9. Cool completely on a wire rack

Icing:

1. Add the butter to the cream cheese and beat well until fluffy

2. Cream the icing sugar and cream cheese-butter mixture together

3. Add the Solerno Blood Orange Liquor

4. Spread the icing over the top of one of the cakes and sandwich the second one on top

5. Spread the remaining icing over the top of the cake and decorate with walnuts or any way you like!
