A Fall Twist on a Classic Treat

Every Thanksgiving I look forward to heading to my parents humble abode and settling in for 4 days of rest and relaxation before the holiday craze hits. This year’s agenda included a bit of pre and post Thanksgiving Dinner yoga , to counteract the feast I was about to consume.  I also wanted to mix things up a bit with the classic’s and the best way this Dame knows how is by adding some whiskey spirit!  In searching through my parents rather empty refrigerator for some inspiration I came across a sticky, sweet surprise – Tonic 01.
Tonic 01 is Tuthilltown’s Bourbon barrel matured maple syrup.  The NOBLE brand procures medium amber grade Maple syrup from heritage sugar shacks in the ancient maple orchards of Quebec.  The syrup is then matured in Tuthilltown charred American oak barrels, with just a hint of raw Tuthilltown bourbon. My mind began to wander through the countless concoctions I could conjure – but landed with the best way to kick start my day, by adding a little whiskey to my breakfast!  In spirit of the season my mother and I chose to make pumpkin spice pancakes and smoked Canadian bacon drizzled with the whiskey infused maple syrup.  The syrup soaked into the light fluffy circles creating the perfect complement of savory and sweet in every bite.

Recipe

Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes
Ingredients:
  • 1 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1 large egg, lightly beaten
  • 1 tbsp canola oil
  • 1 cup nonfat milk
  • 1/3 cup pure pumpkin
Preparation:
Whisk flour, sugar, baking powder, salt, cinnamon, ginger and nutmeg together in a medium bowl. Combine egg, oil, milk and pumpkin in a small bowl. Stir pumpkin mixture into dry ingredients. Leave to stand for five minutes. For each pancake, scoop 1/4 cup of batter on to a hot griddle or nonstick skillet sprayed with cooking spray. Turn pancakes when bubbles appear and edges are cooked, after about 2 minutes. Cook for 1 1/2 minutes on second side.
Makes 8-10 pancakes.
